This autumn night found my middle daughter and I in the kitchen.
I'm not sure why, at 9:15 at night, we were making apple rings.
But we were.
Actually she did all the cutting, mixing, and battering.
I just did the frying.

And, oh, boy were they easy and SO GOOD!
Peeling, coring, and cutting the apples took a good bit of time, but everything else just evolved.
Ingredients
1 large egg white
1 cup water
1 tablespoon vanilla
1 cup all-purpose flour
Dash of salt
6 large apples, peeled, cored, and sliced
Canola oil for frying
Cinnamon and sugar for sprinkling
Cinnamon Icing:
4 tablespoons butter, melted
1/3 cup sugar
1 tablespoon cinnamon
2 tablespoons milk
1 cup powdered sugar
Core, peel, and slice apple to desired thickness.
Heat Canola Oil for frying while beating egg white until foamy.
Add water and vanilla to egg white.
Whisk in flour and salt.
Coat apple slices thoroughly.
Fry on medium-low heat for 3-4 minutes, flipping slices over halfway, or until golden brown and crisp on both sides. Place on paper toweled plate and sprinkle liberally with sugar and cinnamon.
Place fried rings on a wire rack above a cookie sheet and place in preheated oven at 350 degrees.
Place in oven for 6-8 minutes or until delicately crisp.
While rings are baking in oven, mix the icing ingredients.
Pour over baked apple rings.
Very tasty with vanilla ice cream or sweetened condensed milk dip.
And while they're in the oven your house will smell DIVINE!
